SUMMER RECIPES

Summer is the time of expansion, lush growth, lightness and increased outward activity.  Energies are high, the days are long.  It is time to play, spending time with friends and families.  In summer we begin to reap the harvest of the seeds planted in spring.  Plans and projects come into fruition.  The fragrant smells of herbs and flowers fill the air.  An abundance of fruit ripens on the trees.  It is the time for light, watery, refreshing foods.

ROCKMELON SMOOTHIE

½ a chopped rockmelon
4 soaked medjool dates
Young coconut water and pulp

Blend until smooth in a high - powered blender.    Kids love this!

CUCUMBER DIP

1 large cucumber
1 small salad onion
¼ cup chopped parsley
1 tablespoon chopped fresh dill
1 sprig of mint
juice of a small lemon
1 avocado
1 teaspoon organic raw honey

Blend until smooth and creamy.  Keeps for several days in the refrigerator.



TASTES LIKE SALMON

2 cups almonds (soaked overnight)
2 large organic carrots
½ cup carrot juice
½ cup chopped organic onion
2 cups chopped celery
½ cup chopped parsley
1/3 cup chopped spring onion
2 teaspoons kelp powder or 2 sheets chopped nori
1 tablespoon dulse flakes
½ teaspoon Celtic Sea Salt

Alternate feeding handfuls of the mixture through a heavy duty juicer.  Form into a loaf or mould.
This is delicious wrapped in cos lettuce leaves, stuffed into celery, or red peppers.

PARADISE PUDDING

1 very large ripe mango
½ red papaya
1 small avocado
1 large sliced ripe banana,

Blend the mango, papaya and avocado until thick and creamy.  Serve in a glass parfait glass, alternating  the blended mango, papaya and avocado with the sliced banana, to make attractive layers.  This makes a satisfying breakfast.   YUM!
