Chocolate Mudcake with Orange Cashew Crème

This cake will delight everybody.

  • 2 ½ cups walnuts
  • ½ cup pitted dates (soaked 6 hours)
  • 1 cup figs (soaked overnight)
  • ½ cup organic carob powder
  • 1 teaspoon pure vanilla essence
  • Date soak water

METHOD

Grind the walnuts in a food processor. Add the dates, figs, carob powder, vanilla and process until the mixture forms a ball. Add a little soak water (about one tablespoon) and continue processing until the mixture is super smooth and the figs are no longer grainy. Spread onto a large plate and form into a small, round sponge cake-shape about two inches thick. I use a metal spatula to smooth the mixture. Set aside.

Orange Cashew Crème

  • ¾ cups soaked cashews
  • 1 small orange
  • ½ teaspoon pure orange essence
  • 1 tablespoon date soak water

METHOD

Peel, chop and de-seed the orange. Blend together with the rest of the ingredients until smooth. Spread thickly over the top of the cake. Decorate with chopped orange pieces.
